Lambrusco di Sorbara DOC Ciso was created as a tribute to the history and farming soul of the Barbanti family, preserving the legacy of the grandfather from whom it takes its name. It is a dry sparkling wine with a light ruby red color, crossed by a fine and persistent perlage that enhances its elegance. On the nose it offers intense aromas of currant and violet, while on the palate it stands out for its lively freshness, the balance between acidity and tannins, and a savory and refined finish. Produced using the ancestral method, Ciso tells the story of the purity and simplicity of traditional winemaking: the grapes, hand-harvested in September, are processed without chemical additives. Refermentation occurs naturally in the bottle, thanks to the lysis of selected yeasts, creating a sediment that testifies to the authenticity of the process. The crown cap preserves its integrity and genuine character. Ciso is the most sincere expression of Modenese viticulture: it naturally accompanies the typical flavors of Emilian cuisine — from boiled meats with sauces to gnocco fritto, from crescentine with cured meats to tortellini in brodo — offering with every sip a memory of celebration, tradition, and conviviality.
