The Parmigiano Reggiano we offer is the result of careful selection and aging ranging from 12 to an extraordinary 100 months. Each stage of refinement gives the cheese unique characteristics: at 12 months it is young, with a sweet and milky taste, ideal for those who prefer delicate flavors. Beyond 24 months, the cheese acquires greater structure and more pronounced aromatic complexity, with notes of dried fruit and meat broth. Longer aging periods, up to 84 and 100 months, are true rarities for connoisseurs: savory, crumbly, rich in tyrosine crystals and with an intense flavor, perfect to enjoy in flakes as the absolute star at the table.
