The Tre Latti Lari with vegetable rennet is born from the balanced union of cow’s, sheep’s, and goat’s milk, inspired by the ancient Garfagnana tradition. With its dark rind and white, crumbly paste, it is a cheese with a unique flavor, also ideal for those following a vegetarian diet.
Inspired by the peasant customs of Garfagnana in the early 1900s, the Tre Latti Lari with vegetable rennet is the result of the harmonious combination of three milks, cow’s, sheep’s, and goat’s, which together create a rich and unmistakable aromatic profile. After an initial aging of several months at the dairy, the wheels are transferred to the tuff cave of Lari, where they mature slowly on wooden boards, wrapped in straw and immersed in a natural microclimate that enhances their aromas.
The vegetable rennet makes it suitable for vegetarians, while the treatment with vegetable charcoal gives the rind its characteristic black color. The paste, white and crumbly, offers the palate a complex yet balanced flavor, perfect to enjoy in flakes or grated to enrich refined dishes.
